Today’s Special: Spicy Mango Coconut Curry

As the weather starts to cool down, I find myself craving warming and comforting dishes. That’s why today, I’m excited to share with you my recipe for Spicy Mango Coconut Curry. This unique combination of flavors is sure to surprise and delight your taste buds!

For this recipe, you will need the following ingredients:

  • 1 ripe mango, diced
  • 400ml coconut milk
  • 200g cooked chickpeas
  • 2 tbsp red curry paste
  • 500ml vegetable broth
  • 1 bell pepper, sliced
  • 100g baby spinach
  • Juice of 1 lime
  • Fresh cilantro, for garnish

You will also need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large pot/li>
  • wooden spoon
  • ladle

To start, heat a large pot over medium heat and add the red curry paste. Cook for a minute until fragrant, then add the diced mango and bell pepper. Cook for another 2-3 minutes until slightly softened.

Next, pour in the coconut milk and vegetable broth, stirring to combine. Add in the cooked chickpeas and baby spinach, allowing the spinach to wilt. Let the curry simmer for about 15-20 minutes to allow the flavors to meld together.

Once the curry has thickened slightly, squeeze in the lime juice for a pop of freshness. Taste and adjust the seasoning as needed with salt and pepper. Serve the Spicy Mango Coconut Curry hot, garnished with fresh cilantro.

This dish serves 4 people and each serving weighs approximately 350g. One serving of this Spicy Mango Coconut Curry is around 300 calories.
