Greetings, fellow foodies! Today, I’m excited to share a new dish that I created inspired by a recent trip to Thailand. The vibrant flavors of Thai cuisine always leave me feeling energized and satisfied, so I wanted to recreate that experience in my own kitchen. This Spicy Thai Pineapple Stir-Fry is a perfect blend of sweet, spicy, and savory flavors that will transport you to the bustling streets of Bangkok with every bite.

For this recipe, you’ll need the following ingredients (approximate weights):

  • 500g pineapple (diced)
  • 200g bell peppers (sliced)
  • 300g chicken breast (cut into strips)
  • 200ml coconut milk
  • 50ml soy sauce
  • 2 tbsp red curry paste
  • 30g ginger (minced)
  • 3 cloves of garlic (minced)
  • 2 tbsp lime juice
  • 2 tbsp brown sugar
  • a handful of basil leaves

To bring this dish to life, you’ll need the following kitchen tools:

  • wok
  • chef’s knife
  • cutting board
  • wooden spoon
  • measuring cups

Start by heating your wok over medium-high heat and add a bit of oil. Sauté the minced garlic and ginger until fragrant, then add the chicken strips and cook until they are no longer pink. Next, add the sliced bell peppers and diced pineapple to the wok, stirring constantly.

In a small bowl, mix together the coconut milk, soy sauce, red curry paste, lime juice, and brown sugar. Pour this mixture over the chicken and vegetables in the wok, stirring well to combine. Allow the sauce to simmer and thicken slightly.

Finish the dish by adding a handful of fresh basil leaves and stir until they are wilted. Taste and adjust the seasoning with more soy sauce, lime juice, or sugar as needed. Serve the Spicy Thai Pineapple Stir-Fry hot over steamed jasmine rice for a truly authentic experience.

This flavorful dish weighs around 1200g once cooked and serves 4 people. Each serving is approximately 300g and contains around 450 calories. For an extra burst of flavor, try toasting some coconut flakes and sprinkling them over the stir-fry before serving.
