  • purple sweet potatoes (500g)
  • coconut milk (400ml)
  • lemongrass (2 stalks)
  • star anise (3 pieces)
  • fresh ginger (50g)
  • lime leaves (4 leaves)
  • tofu (200g)
  • coconut oil
  • chili flakes

Preparation

Start by peeling and cubing the purple sweet potatoes. In a saucepan, heat a tablespoon of coconut oil over medium heat. Add in the lemongrass (smashed with the back of a knife), star anise, and grated ginger. Cook until fragrant, then add in the cubed sweet potatoes and coconut milk. Simmer until the sweet potatoes are tender.

While the sweet potatoes are cooking, cut the tofu into cubes and fry in a separate pan until crispy. Set aside.

Once the sweet potatoes are tender, remove the lemongrass, star anise, and ginger. Add in the crispy tofu, lime leaves, and a sprinkle of chili flakes for a bit of heat. Stir everything together and let simmer for a few more minutes to allow the flavors to meld.

Tips

For an extra burst of flavor, try adding a splash of soy sauce or a squeeze of lime juice before serving. This will elevate the dish and bring out even more depth in the flavors.
