Today, I am excited to share a unique and flavorful dish that combines unexpected ingredients for a truly special taste experience. This recipe was inspired by a recent trip to a spice market where I found some unusual spices that I couldn’t wait to experiment with in the kitchen.

Ingredients:

  • 200g boneless lamb shoulder, cut into cubes
  • 1/2 pineapple, cut into chunks
  • 1 starfruit, thinly sliced
  • 1 red onion, diced
  • 1 tbsp tamarind paste
  • 1 tsp ground sumac
  • 1/2 tsp cardamom
  • 1/4 tsp ground cloves
  • 250ml coconut milk

Kitchen Tools:

  • chef’s knife

  • skewers
  • grill pan

Preparation:

Start by marinating the lamb shoulder cubes in a mixture of tamarind paste, sumac, cardamom, and cloves. Let the meat sit for at least an hour to absorb all the flavors. While the lamb is marinating, soak the skewers in water to prevent them from burning on the grill.

Once the lamb has marinated, thread the pieces onto the skewers along with the pineapple chunks, starfruit slices, and diced red onion. Preheat a grill pan over medium-high heat and lightly oil it to prevent sticking. Grill the skewers for about 15-20 minutes, turning occasionally, until the lamb is cooked through and the fruits have a nice caramelized char.

In a saucepan, heat the coconut milk with a pinch of salt until it starts to simmer. Serve the grilled skewers on a plate drizzled with the warm coconut milk sauce.

Tips:

For an extra burst of flavor, sprinkle some toasted coconut flakes on top of the finished dish before serving. The crunchiness and nuttiness of the coconut will complement the sweetness of the grilled fruits and the savory lamb perfectly.

Serving:
