Ingredients:

  • 1 whole pineapple (about 800g), peeled and sliced
  • 100g brown sugar
  • 50g unsalted butter
  • 100g all-purpose flour
  • 50g shredded coconut
  • 50g granulated sugar
  • 1/2 tsp salt

To start, preheat your oven to 350°F (180°C). In a large skillet over medium heat, melt the butter and add the brown sugar. Stir until the sugar has dissolved and starts to caramelize. Add the pineapple slices and cook for about 5-7 minutes on each side, until they are golden and caramelized. Transfer the pineapple slices to a baking dish.

In a mixing bowl, combine the flour, shredded coconut, granulated sugar, and salt. Add the mixture over the caramelized pineapple slices in the baking dish, creating a crumble topping. Place the dish in the preheated oven and bake for 20-25 minutes, until the crumble is golden brown and crispy.

Once done, remove from the oven and let it cool slightly before serving. The caramelized pineapple with coconut crumble is best enjoyed warm, either on its own or with a scoop of vanilla ice cream for an extra indulgent treat.
