Ingredients:

  • 500g lamb meat (cubed)
  • 1 large onion (diced)
  • 3 garlic cloves (minced)
  • 2 tbsp curry powder
  • 1 tsp cinnamon powder
  • 400ml coconut milk
  • 100g dried apricots (chopped)
  • 50g slivered almonds
  • Fresh cilantro (chopped) for garnish

Next, pour in the coconut milk and add the chopped dried apricots. Cover the pot with a lid and let it simmer for about 1.5-2 hours, or until the lamb is tender and the sauce has thickened.

In a separate pan, toast the slivered almonds until golden brown and fragrant. Sprinkle them over the lamb tajine before serving, along with a generous amount of fresh cilantro for a burst of freshness.
