Today, I am excited to share my recipe for Pistachio Cardamom Eclairs. These delicate pastries are filled with a creamy pistachio custard and topped with a hint of cardamom-infused glaze, creating a delightful treat perfect for any occasion.

For this recipe, you will need the following ingredients:

  • pistachios (shelled and chopped)
  • eggs
  • all-purpose flour
  • unsalted butter
  • whole milk
  • sugar
  • ground cardamom

To create these Pistachio Cardamom Eclairs, you will need the following kitchen tools:

  • mixing bowl
  • whisk
  • saucepan
  • piping bag

Start by preheating your oven to 400°F. In a saucepan, bring the milk to a simmer over medium heat. In a mixing bowl, whisk together the eggs and sugar until pale and fluffy. Slowly add in the flour and mix until well combined. Pour the hot milk into the egg mixture, whisking constantly.

Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened. Remove from heat and stir in the chopped pistachios.
