As I was browsing through the farmer’s market today, the vibrant colors and enticing smells of fresh mangoes and spices inspired me to create a unique and exotic dish for dinner. I decided to combine the sweetness of mangoes with the savory flavors of chicken and a spicy kick to create a mouthwatering Spicy Mango Chicken Curry.

Ingredients:

  • boneless, skinless chicken breast (500g)
  • ripe mango (2, diced)
  • coconut milk (400ml)
  • curry powder (2 tbsp)
  • chili flakes (1 tsp)
  • ginger (1 tbsp, minced)
  • garlic (2 cloves, minced)
  • onion (1, chopped)
  • coriander (for garnish)
  • salt and pepper (to taste)
  • vegetable oil (2 tbsp)

To start, heat vegetable oil in a large skillet over medium heat. Add minced garlic, ginger, and chopped onion, sautéing until fragrant. Slice the chicken breast into bite-sized pieces and season with salt, pepper, and curry powder. Add the chicken to the skillet, cooking until browned on all sides.

Next, stir in the diced mangoes and coconut milk, allowing the mixture to simmer for about 15 minutes until the chicken is cooked through and the sauce has thickened. Add chili flakes for a spicy kick, adjusting the seasoning to your taste preferences.
