Today, I am excited to share a unique Moroccan-inspired dish that is perfect for a cozy night in or a special gathering with friends. This recipe combines traditional Moroccan flavors with a modern twist, creating a dish that is both comforting and exciting.

Ingredients:
– 400g boneless chicken thighs
– 1 large onion, chopped
– 2 cloves of garlic, minced
– 1 tablespoon of ras el hanout spice blend
– 1 teaspoon of ground cinnamon
– 1 can of chickpeas (400g), drained and rinsed
– 1 cup of dried apricots, chopped
– 1 cup of almond milk
– 1 tablespoon of honey
– Salt and pepper to taste
– Fresh cilantro, for garnish

Kitchen Tools:

  • measuring cups

To start, heat a skillet over medium heat and add the chopped onion. Cook until the onion is soft and translucent, then add the minced garlic and cook for another minute. Push the onion and garlic to the side of the skillet and add the chicken thighs. Brown the chicken on both sides, then sprinkle the ras el hanout spice blend and ground cinnamon over the chicken.

Next, add the chickpeas, chopped apricots, almond milk, and honey to the skillet. Stir everything together and bring to a simmer. Cover the skillet and let the dish cook for about 20-25 minutes, or until the chicken is cooked through and the flavors have melded together.

Once the dish is ready, season with salt and pepper to taste. Serve the Moroccan-inspired chicken stew hot, garnished with fresh cilantro. This dish pairs well with couscous or crusty bread.
