  • saffron threads (1/4 tsp)
  • lemongrass (2 stalks, chopped)
  • fennel bulb (1, sliced)
  • red curry paste (2 tbsp)
  • tofu (200g, cubed)
  • pineapple (1/2, diced)
  • cashews (50g, toasted)
  • lime (1, juiced)
  • fresh basil leaves (for garnish)
