Ingredients:

  • elbow macaroni (300g)
  • pumpkin puree (200g)
  • aged cheddar cheese (150g, shredded)
  • whole milk (250ml)
  • butter (50g)
  • ground nutmeg (1/2 tsp)
  • ground cinnamon (1/2 tsp)
  • salt (to taste)
  • black pepper (to taste)

To start, preheat your oven to 350°F (180°C) and bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente, then drain and set aside.

In a stockpot, melt butter over medium heat. Whisk in the pumpkin puree, milk, nutmeg, cinnamon, salt, and black pepper until well combined. Allow the mixture to simmer for a few minutes until it thickens slightly.
