As the leaves turn golden and the air becomes crisp, I find myself craving comforting dishes to warm me from the inside out. Today, I’m excited to share my recipe for Rosemary Apple Pork Stew, a hearty and flavorful dish that embodies the essence of fall.

Ingredients:

  • 600g pork shoulder, cubed
  • 2 apples, sliced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 stalks of celery, chopped
  • 3 cloves of garlic, minced
  • 2 sprigs of fresh rosemary
  • 750ml chicken broth
  • 2 tbsp apple cider vinegar
  • Salt and pepper to taste

To start, heat some oil in a Dutch oven over medium-high heat. Add the cubed pork shoulder and sear until browned on all sides. This will take about 6-8 minutes. Remove the pork from the pot and set it aside.

Next, add the chopped onion, sliced apples, sliced carrots, chopped celery, and minced garlic to the pot. Sauté the vegetables until they begin to soften, around 5 minutes. Then, return the pork to the pot and pour in the chicken broth and apple cider vinegar. Add the rosemary sprigs and season with salt and pepper.

Cover the pot with a lid and let the stew simmer on low heat for 1.5-2 hours, or until the pork is tender. The aroma of the rosemary and apples will fill your kitchen, creating a cozy atmosphere perfect for fall.

Once the stew is ready, discard the rosemary sprigs and adjust the seasoning to taste. Serve the Rosemary Apple Pork Stew piping hot, garnished with a fresh sprig of rosemary for a pop of color and flavor.
