Today’s Special: Spiced Apple and Bacon Stuffed Acorn Squash

As the weather cools down and the leaves start to change colors, I find myself craving warm, comforting meals that are full of flavor. That’s why I’m excited to share this unique recipe for Spiced Apple and Bacon Stuffed Acorn Squash with you today. It’s the perfect blend of sweet and savory, with a touch of spice that will warm you up from the inside out.

To make this delicious dish, you’ll need the following ingredients:

  • 1 acorn squash (500g)
  • 4 slices of bacon (100g)
  • 1 large apple, diced (200g)
  • 1 small onion, diced (100g)
  • 2 cloves of garlic, minced
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp maple syrup
  • 2 tbsp olive oil
  • Salt and pepper to taste

To prepare this dish, start by preheating your oven to 400°F (200°C). Cut the acorn squash in half and scoop out the seeds. Place the squash halves cut-side down on a baking sheet and roast them in the oven for 30 minutes, or until they are tender.

In a skillet, cook the bacon until it is crispy. Remove the bacon from the skillet and set it aside. In the same skillet, sauté the onion and garlic until they are softened. Add the diced apple, cinnamon, nutmeg, and maple syrup to the skillet and cook until the apple is tender.

Once the acorn squash is cooked, flip the halves over and fill them with the apple and bacon mixture. Drizzle with olive oil and season with salt and pepper. Return the squash to the oven and bake for an additional 15 minutes.

Once the squash is golden and bubbly, remove it from the oven and let it cool slightly before serving. The combination of the spiced apples, crispy bacon, and tender squash is truly irresistible.

To serve, simply cut the stuffed acorn squash into halves or quarters and enjoy the delicious flavors of fall in every bite.

One clever tip for this recipe is to sprinkle a bit of brown sugar on top of the stuffed squash before baking for an extra touch of sweetness and caramelization.
