The sweet and savory flavors blend beautifully in this dish, making it a perfect choice for a family dinner or a casual get-together with friends.

Ingredients:

  • Arborio rice (300g)
  • Pumpkin puree (200g)
  • Apple, diced (1 medium)
  • Onion, finely chopped (1)
  • Vegetable broth (1 liter)
  • Ground cinnamon (1 tsp)
  • Ground nutmeg (1/2 tsp)
  • Butter (2 tbsp)
  • Olive oil (2 tbsp)
  • Parmesan cheese, grated (50g)
  • Salt and pepper to taste

  • Chef’s knife
  • Grater

To start, heat the vegetable broth in a saucepan over low heat until it simmers. In another saucepan, heat the olive oil and sauté the chopped onion until it turns translucent. Add the Arborio rice to the pan and stir well to coat the grains with oil.

Next, add the diced apple, pumpkin puree, ground cinnamon, and nutmeg to the rice mixture. Stir everything together until the ingredients are well combined. Begin adding the simmering vegetable broth to the rice one ladle at a time, stirring constantly and allowing the liquid to be absorbed before adding more.

Continue this process until the rice is cooked al dente and has a creamy consistency. This should take about 20-25 minutes. Once the risotto is ready, stir in the butter and Parmesan cheese until melted and well incorporated. Season with salt and pepper to taste.

Serve the spiced pumpkin and apple risotto hot, garnished with some extra Parmesan cheese and a sprinkle of nutmeg. This dish weighs approximately 1200g after cooking and serves 4 people, with each serving weighing around 300g. Each serving is approximately 350 calories.

A clever tip for this recipe is to toast the Arborio rice in a dry pan for a few minutes before adding the oil. This helps enhance the nutty flavor of the rice and gives the risotto a richer taste.
