  • Arborio rice (300g)
  • Pumpkin, diced (400g)
  • Onion, finely chopped (1)
  • Garlic, minced (2 cloves)
  • White wine (150ml)
  • Vegetable broth (1 liter)
  • Fresh sage leaves, chopped (10 leaves)
  • Parmesan cheese, grated (100g)
  • Salt and pepper to taste
  • Butter (50g)

To start, heat the vegetable broth in a saucepan until simmering. In a large non-stick pan, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant. Next, stir in the Arborio rice, coating it with the butter mixture.

Begin adding the hot vegetable broth to the rice, one ladle at a time, stirring continuously until absorbed. After about 15 minutes, add the diced pumpkin and continue to cook until the rice is creamy and the pumpkin is tender.

Pour in the white wine and stir until absorbed. Add the chopped sage leaves, grated Parmesan cheese, salt, and pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
