Today’s Recipe: Spicy Thai Pumpkin Curry Noodle Soup

Hey foodies! Today, I’m excited to share with you a delicious and unique recipe for Spicy Thai Pumpkin Curry Noodle Soup. This dish is perfect for cozy fall evenings when you want something warming and comforting with a kick of spice.

Ingredients:

  • 1 small pumpkin, diced
  • 200g rice noodles
  • 400ml coconut milk
  • 3 tbsp red curry paste
  • 1 liter vegetable broth
  • 2 stalks lemongrass, smashed
  • 4 kaffir lime leaves
  • 2 Thai bird chilies, sliced
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 tbsp lime juice
  • Fresh cilantro, chopped

Kitchen Tools:

  • knife
  • cutting board
  • large pot
  • wooden spoon

To start, heat some oil in a large pot over medium heat. Add the red curry paste and cook for a minute until fragrant. Toss in the diced pumpkin and stir to coat with the curry paste. Pour in the vegetable broth and coconut milk, then add the smashed lemongrass, kaffir lime leaves, and sliced Thai bird chilies. Let the soup simmer for about 15-20 minutes until the pumpkin is tender.

While the soup is simmering, cook the rice noodles according to the package instructions in a separate pot. Once cooked, drain and set aside.

Season the soup with fish sauce, brown sugar, and lime juice. Adjust the seasoning to your taste, adding more spice or sweetness as needed. Remove the lemongrass stalks and kaffir lime leaves from the soup.

To serve, divide the cooked rice noodles into bowls and ladle the hot soup over the top. Garnish with fresh cilantro before serving.

The approximate total weight of the cooked dish is 1800g, with 4 servings at 450g each. One serving of this Spicy Thai Pumpkin Curry Noodle Soup is approximately 350 calories.

One unique tip for this dish is to roast the diced pumpkin in the oven before adding it to the soup. This will enhance the pumpkin’s sweetness and add depth of flavor to the dish.

I hope you give this Spicy Thai Pumpkin Curry Noodle Soup a try and enjoy the warm, comforting flavors it has to offer. Feel free to customize it with your favorite veggies or protein to make it your own! Happy cooking!
