Autumn Apple Pecan Cake

Today, I’m excited to share a new fall treat that combines the warm flavors of apple and pecan in a delicious cake. This recipe is perfect for chilly evenings spent by the fireplace or as a sweet addition to your Thanksgiving table.

Ingredients:

  • 3 medium apples, peeled and diced
  • 1 cup pecans, chopped
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Start by preheating your oven to 350°F (180°C) and greasing a 9×9 baking pan. In a mixing bowl, whisk together the flour, sugar, cinnamon, baking soda, and salt. Add the melted butter and eggs, mixing until well combined. Fold in the diced apples and chopped pecans until evenly distributed throughout the batter.

Pour the batter into the prepared baking pan, spreading it out evenly. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. The cake should be golden brown and fragrant.

Once the cake is done, remove it from the oven and let it cool slightly before slicing and serving. This cake is best enjoyed warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.
