Healthy Pumpkin Spice Energy Bites

Today, I’m excited to share a new recipe for Healthy Pumpkin Spice Energy Bites. As the fall season approaches, I love to incorporate warm spices like cinnamon, nutmeg, and ginger into my snacks. These energy bites are a perfect way to satisfy your sweet tooth while also giving you a boost of energy during the day.

Ingredients:

  • 200g pitted dates
  • 100g pumpkin puree
  • 50g almond butter
  • 150g rolled oats
  • 30g chia seeds
  • 1 tbsp pumpkin spice mix
  • 1 tsp vanilla extract
  • 2 tbsp honey
  • 50g shredded coconut (for coating)

Kitchen Tools:

  • food processor
  • mixing bowl
  • measuring cups
  • spatula
  • baking sheet

I start by pulsing the dates in a food processor until they form a sticky paste. Then, I add in the pumpkin puree, almond butter, rolled oats, chia seeds, pumpkin spice mix, vanilla extract, and honey. I pulse everything together until it forms a thick, dough-like consistency.

Using a spatula, I transfer the mixture into a mixing bowl. I then roll the mixture into small balls, about one inch in diameter. I roll each ball in shredded coconut to coat them evenly. Once all the energy bites are coated, I place them on a baking sheet and refrigerate for at least 30 minutes to firm up.

This recipe makes approximately 20 energy bites, with each serving weighing around 30g. One serving is roughly 100 calories. A clever tip for this recipe is to add a sprinkle of sea salt to the shredded coconut for a sweet and salty flavor combination.
