  • 3 medium apples, peeled and diced
  • 1 cup fresh cranberries
  • 1 small onion, chopped
  • 2 stalks of celery, chopped
  • 1 large carrot, chopped
  • 4 cups vegetable broth
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp olive oil
  • 1 cup water
