As the weather turns cooler and the leaves begin to change, I find myself craving warm, comforting dishes that celebrate the flavors of fall. Today, I’m excited to share with you my recipe for Autumn Harvest Ratatouille. This twist on the classic French dish highlights the bounty of the season with a unique combination of vegetables and spices that is sure to delight your taste buds.

To begin, gather the following ingredients:

  • 1 medium eggplant, diced
  • 1 small butternut squash, peeled and cubed
  • 1 cup brussels sprouts, trimmed and halved
  • 1/2 cup dried cranberries
  • 1/4 cup pumpkin seeds
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp maple syrup
  • 3 tbsp olive oil
  • Salt and pepper to taste

Prepare your kitchen tools:

  • spatula

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a mixing bowl, combine the diced eggplant, cubed butternut squash, halved brussels sprouts, dried cranberries, and pumpkin seeds. Drizzle with olive oil and maple syrup, then sprinkle with cinnamon, nutmeg, salt, and pepper. Toss everything together until well coated.

Spread the vegetable mixture out in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and caramelized. Be sure to stir the mixture halfway through the cooking time to ensure even browning.

Once the ratatouille is done cooking, remove it from the oven and let it cool slightly before serving. This dish is perfect on its own as a cozy autumn meal, or you can serve it as a side dish with your favorite protein.
