Ingredients:

  • 2 medium acorn squash (approximately 1 kg)
  • 2 large apples (approximately 300 g)
  • 1 cup quinoa (approximately 200 g)
  • 2 cups vegetable broth (approximately 500 ml)
  • 1 medium onion, diced (approximately 150 g)
  • ½ cup walnuts, chopped (approximately 60 g)
  • ¼ cup dried cranberries (approximately 40 g)
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 2 tbsp maple syrup
  • olive oil
  • salt and pepper to taste

To begin, preheat your oven to 375°F (190°C). Using a large sharp knife, carefully cut the acorn squash in half lengthwise. Scoop out the seeds and place the squash halves cut side down on a roasting pan. Bake in the preheated oven for 30-40 minutes, or until the squash is fork-tender.

While the squash is baking, prepare the stuffing. In a saucepan, heat some olive oil over medium heat. Add the diced onion and cook until translucent. Stir in the quinoa and vegetable broth, then bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes, or until the quinoa is cooked.

In a separate skillet, toast the chopped walnuts until fragrant. Add in the chopped apples, dried cranberries, cinnamon, nutmeg, and maple syrup. Cook until the apples are tender and the mixture is fragrant.

Once the quinoa is cooked, combine it with the apple mixture. Season with salt and pepper to taste. Remove the squash from the oven and carefully fill each squash half with the quinoa and apple stuffing. Return to the oven and bake for an additional 15 minutes.

Once the squash is tender and the stuffing is heated through, remove from the oven and let cool slightly before serving. Enjoy the warm, comforting flavors of this spiced apple stuffed acorn squash as a standalone meal or as a delicious side dish.
