  • 500g Brussels sprouts
  • 50g miso paste
  • 60ml maple syrup
  • 30ml sesame oil
  • 30ml soy sauce
  • 3 cloves garlic, minced
  • 1 tsp grated ginger

Start by preheating your oven to 200°C. Trim the stems of the Brussels sprouts and cut them in half. In a mixing bowl, whisk together the miso paste, maple syrup, sesame oil, soy sauce, minced garlic, and grated ginger until well combined. Add the Brussels sprouts to the bowl and toss them in the glaze until evenly coated.

Spread the Brussels sprouts out on a baking sheet in a single layer, making sure they are not crowded. Roast in the preheated oven for 20-25 minutes, or until they are tender and caramelized, stirring halfway through cooking.
