Today, I’m excited to share with you my recipe for Curried Pumpkin Pasta, a unique twist on a classic Italian dish that will surely surprise and delight your taste buds.

For this recipe, you will need the following ingredients:

  • 200g pumpkin puree
  • 150ml coconut milk
  • 1 tbsp curry powder
  • 2 cloves of garlic, minced
  • 1 small onion, diced
  • 250g linguine
  • 100g fresh spinach
  • 50g cashews, chopped
  • 1 lime, juiced and zested
  • Salt and pepper, to taste

To bring this dish to life, you will need the following kitchen tools:

  • large pot
  • sauté pan
  • wooden spoon
  • grater

Start by cooking the linguine according to the package instructions until al dente. In a sauté pan, heat a splash of olive oil over medium heat and sauté the diced onion and minced garlic until fragrant. Add the curry powder and cook for another minute until the spices are toasted.

Next, add the pumpkin puree and coconut milk to the pan, stirring to combine. Let the sauce simmer for a few minutes to meld the flavors together. Season with salt and pepper to taste. Toss in the cooked linguine and fresh spinach, folding gently to coat everything in the creamy curry sauce.
