Ingredients:

  • 500g pumpkin puree
  • 2 ripe pears, peeled and diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 liter vegetable broth
  • 400ml coconut milk
  • 2 tsp curry powder
  • 1 tsp cinnamon
  • to taste

To start, heat a bit of oil in a large soup pot over medium heat. Add the chopped onion, minced garlic, and grated ginger, cooking until fragrant and softened. Next, toss in the diced pears and cook until they start to caramelize.

Once the pears have softened, stir in the pumpkin puree, vegetable broth, coconut milk, curry powder, cinnamon, salt, and pepper. Bring the mixture to a simmer, allowing the flavors to meld together for about 20 minutes.

Using an immersion blender, carefully blend the soup until smooth and creamy. Adjust the seasoning according to your taste preferences. Serve the Spiced Pumpkin and Pear Soup hot, garnished with a dollop of coconut cream or a sprinkle of toasted pumpkin seeds for added texture.
