Ingredients:

  • Butternut squash, peeled and diced
  • Quinoa
  • Red onion, finely chopped
  • Garlic, minced
  • Vegetable broth
  • Cumin
  • Cinnamon
  • Nutmeg
  • Dried cranberries
  • Chopped pecans

I start by preheating the oven to 200°C. While it’s heating up, I toss the diced butternut squash with a drizzle of olive oil, salt, and pepper, then spread it out on a baking sheet and roast until tender and slightly caramelized.

In the meantime, I rinse the quinoa under cold water and cook it according to the package instructions, using the vegetable broth instead of water to add extra flavor. Once the quinoa is cooked, I fluff it up with a fork and set it aside.

Next, I heat some olive oil in a saucepan over medium heat and sauté the red onion and garlic until softened. Then, I add the cooked quinoa, roasted butternut squash, cumin, cinnamon, nutmeg, dried cranberries, and chopped pecans. I gently mix everything together until it’s well combined and heated through.

To finish off the dish, I season with salt and pepper to taste, and adjust the seasoning if needed. The aroma of the spices and the sweetness of the cranberries create a perfect harmony of flavors.
