Fall-Inspired Quinoa Butternut Squash Skillet: A

Today, as the leaves start to change color and the air gets a bit crisp, I’m excited to share a unique and delicious Autumn recipe that is perfect for cozy evenings at home. This dish combines some unexpected flavors and ingredients to create a dish that is both comforting and exciting.

For this recipe, you will need the following ingredients:
– 300g butternut squash, diced
– 200g quinoa
– 1 red onion, finely chopped
– 2 cloves of garlic, minced
– 1 tsp ground cumin
– 1 tsp smoked paprika
– 500ml vegetable broth
– 100g feta cheese, crumbled
– Handful of fresh parsley, chopped
– Salt and pepper to taste

In addition, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon

To start, heat a large skillet over medium heat and add a drizzle of olive oil. Add the chopped red onion and minced garlic, and sauté until softened. Next, add the diced butternut squash and cook until slightly caramelized. Sprinkle in the ground cumin and smoked paprika, stirring to coat the vegetables.

Add the quinoa to the skillet and toast it for a couple of minutes before pouring in the vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer and cover the skillet. Let it cook for about 15-20 minutes, or until the quinoa is tender and has absorbed the liquid.

Once the quinoa is cooked, fluff it with a fork and stir in the crumbled feta cheese and fresh parsley. Season with salt and pepper to taste. Serve the dish hot, garnished with an extra sprinkle of parsley for a pop of color.

This hearty Autumn quinoa and butternut squash skillet weighs approximately 1200g once cooked. It serves 4 people, with each serving weighing around 300g. Each serving is estimated to be around 350 calories.

One clever tip for this dish is to sprinkle some toasted pine nuts on top before serving for an extra crunch and nutty flavor that complements the dish beautifully.

I hope you give this unique Autumn recipe a try and enjoy the unexpected combination of flavors and textures. Feel free to experiment with different herbs, cheeses, or veggies to make it your own. Happy cooking!
