Spiced Pumpkin and Apple Soup: A Cozy Fall Recipe

Ingredients:

  • 1 small pumpkin (about 800g), peeled and diced
  • 3 apples, peeled, cored, and chopped
  • 1 large onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 liter of vegetable stock
  • 400ml of coconut milk
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Kitchen Tools:

To start, heat the olive oil in a soup pot over medium heat. Add the chopped onion, minced garlic, and grated ginger, and sauté until fragrant. Then, add the diced pumpkin and chopped apples to the pot, along with the vegetable stock. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, until the pumpkin and apples are tender.

Once the vegetables are cooked through, use an immersion blender to blend the soup until smooth. Stir in the coconut milk, ground cinnamon, ground nutmeg, salt, and pepper. Let the soup simmer for another 5-10 minutes to allow the flavors to meld together.

The final touch is adjusting the seasoning to your liking. Add more salt, pepper, or spices as needed to suit your taste. Serve the spiced pumpkin and apple soup hot, garnished with a swirl of coconut milk and a sprinkle of cinnamon on top.

This recipe makes approximately 6 servings, with each serving weighing about 400g. One serving of this spiced pumpkin and apple soup is roughly 250 calories.
