  • Pie dough, store-bought or homemade (200g)
  • Red onion, thinly sliced (1 large)
  • Pear, thinly sliced (2)
  • Balsamic vinegar (30ml)
  • Brown sugar (15g)
  • Goat cheese, crumbled (100g)
  • Fresh thyme leaves (1 tbsp)
  • Salt and pepper to taste

To start, preheat your oven to 375°F (190°C). Roll out the pie dough on a floured surface to create a rough circle about 12 inches in diameter. Transfer the dough to a baking sheet lined with parchment paper.

In a skillet over medium heat, caramelize the thinly sliced red onion with a splash of balsamic vinegar and brown sugar until soft and golden brown. Spread the caramelized onions over the pie dough, leaving a 2-inch border around the edges.

Next, layer the thinly sliced pears over the caramelized onions. Crumble the goat cheese on top of the pears and sprinkle with fresh thyme leaves. Season with salt and pepper to taste.

Fold the edges of the dough over the filling, creating a rustic border. Bake the galette in the preheated oven for 25-30 minutes or until the crust is golden brown and the filling is bubbling.

Once baked, remove the galette from the oven and let it cool slightly before slicing. Serve the Caramelized Onion and Pear Galette warm, garnished with extra fresh thyme leaves if desired.

This dish weighs approximately 800g once cooked, serves 4, with each serving weighing around 200g. Each serving is estimated to have around 350 calories.

One unique tip for this recipe is to brush the edges of the galette with a beaten egg before baking. This will give the crust a beautiful golden sheen and a slightly crispy texture.
