Fall Recipe with a Twist: Butternut Squash and Cranberry Del

Fall Recipe with a Twist: Butternut Squash and Cranberry Del

November 25, 2025 Written by Ava

Today, I am excited to share a unique Fall recipe that combines the comforting flavors of the season with a surprising twist. This dish is perfect for a cozy night in or a special gathering with loved ones.

For this recipe, you will need the following ingredients:

  • butternut squash (500g, peeled and diced)
  • fresh cranberries (100g)
  • shallots (2, thinly sliced)
  • fresh rosemary (1 sprig, chopped)
  • chili flakes (1 tsp)
  • chicken broth (500ml)
  • maple syrup (2 tbsp)
  • balsamic vinegar (2 tbsp)
  • olive oil (2 tbsp)
  • salt and pepper to taste

To bring this unique dish to life, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • roasting pan
  • wooden spoon
  • oven

Start by preheating your oven to 400°F (200°C). In a roasting pan, combine the diced butternut squash, fresh cranberries, sliced shallots, chopped rosemary, and chili flakes. Drizzle with olive oil, maple syrup, and balsamic vinegar. Season with salt and pepper, then toss everything together until well coated.

Roast the mixture in the preheated oven for about 30-35 minutes, or until the butternut squash is tender and caramelized, stirring halfway through cooking. The aroma of the roasted vegetables and cranberries will fill your kitchen with a warm, inviting scent.

Once the butternut squash is cooked to perfection, remove the roasting pan from the oven and drizzle with a little more balsamic vinegar for an extra burst of flavor. Serve this unique fall dish hot as a delicious side or light main course.

The total weight of the cooked dish is approximately 800g, with 4 servings at around 200g each. One serving of this dish is estimated to be around 250 calories.

A clever tip for this recipe is to sprinkle some crumbled feta cheese over the dish just before serving. The creamy and tangy cheese pairs perfectly with the sweet and savory flavors of the butternut squash, cranberries, and balsamic vinegar.

I hope you enjoy trying out this unique Fall recipe and feel free to get creative and make it your own by adding your favorite seasonal ingredients. Happy cooking!
