  • butternut squash (500g, diced)
  • chorizo sausage (200g, sliced)
  • kale (100g, chopped)
  • cannellini beans (400g, drained and rinsed)
  • onion (1, diced)
  • garlic (2 cloves, minced)
  • chicken broth (500ml)
  • olive oil
  • salt and pepper (to taste)

  • large pot
  • wooden spoon
  • soup ladle

Start by heating some olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing until fragrant. Next, add the sliced chorizo sausage and cook until browned. Stir in the diced butternut squash and cook for a few minutes until slightly softened.

Pour in the chicken broth and bring the mixture to a simmer. Let it cook for about 15 minutes until the butternut squash is tender. Add in the chopped kale and cannellini beans, simmering for another 5 minutes until the kale is wilted.

Season the dish with salt and pepper to taste, adjusting as needed. Serve hot in bowls, garnished with a sprinkle of red pepper flakes for a touch of heat.
