Fiery and Flavorful: Spicy Quinoa Stuffed Bell Peppers

Today’s Special: Spicy Quinoa Stuffed Bell Peppers

As the weather starts to cool down, I find myself craving warm and comforting dishes that are also healthy and satisfying. That’s why I’m excited to share my recipe for Spicy Quinoa Stuffed Bell Peppers. These peppers are bursting with flavor and nutrition, making them the perfect meal for a cozy night in or a family dinner.

Ingredients:

  • 2 large red bell peppers
  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1 jalapeno, diced
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1 tsp cumin, 1 tsp chili powder, 1/2 tsp paprika, salt and pepper to taste
  • Fresh cilantro, chopped

Kitchen Tools:

To start, preheat your oven to 375°F (190°C) and prepare your bell peppers by cutting off the tops and removing the seeds and membranes. Place them in a baking dish and set aside. Cook the quinoa according to package instructions in a saucepan.

While the quinoa is cooking, heat some olive oil in a skillet over medium heat. Add the onion, garlic, and jalapeno, sautéing until softened. Then, add the black beans, corn, tomato, and spices, cooking for another few minutes until everything is well combined.

Once the quinoa is cooked, add it to the skillet with the vegetable mixture. Stir everything together and let it cook for a few more minutes to allow the flavors to blend. Remove from heat and stir in the chopped cilantro.

Spoon the quinoa mixture into the prepared bell peppers, pressing down gently to pack it in. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, until the peppers are tender.

Remove from the oven and let cool slightly before serving. These Spicy Quinoa Stuffed Bell Peppers are delicious on their own or topped with avocado slices, a dollop of Greek yogurt, or a squeeze of lime juice. Enjoy!
