Exploring New Flavors: Spicy Mango Chicken Pasta

Hey there, foodies! Today, I’m excited to share with you a unique and flavorful dish that combines the sweetness of mango with the heat of chili peppers. This Spicy Mango Chicken Pasta is perfect for those who love to experiment with bold flavors in their cooking. So, let’s dive right into this scrumptious recipe!

Ingredients:

  • boneless chicken breast (200g)
  • spaghetti (150g)
  • ripe mango, diced (1 medium)
  • red bell pepper, sliced (1)
  • onion, chopped (1 small)
  • red chili pepper, sliced (1)
  • garlic, minced (2 cloves)
  • coconut milk (200ml)
  • lime juice (from 1 lime)
  • olive oil
  • salt and pepper to taste

Kitchen Tools:

  • knife
  • cutting board
  • large skillet
  • pot
  • wooden spoon

To start, season the chicken breast with salt, pepper, and a squeeze of lime juice. In a large skillet over medium heat, cook the chicken in olive oil until fully cooked. Remove the chicken from the skillet and set aside.

In the same skillet, add a bit more olive oil and sauté the onion, garlic, red bell pepper, and chili pepper until fragrant. Add the diced mango and coconut milk, letting the mixture simmer for a few minutes.

Meanwhile, cook the spaghetti according to package instructions in a separate pot. Drain the pasta and add it to the skillet with the mango-coconut mixture. Stir well to combine all the flavors.

Finally, slice the cooked chicken breast into strips and add it to the skillet. Mix everything together and adjust the seasoning with salt, pepper, and more lime juice if needed. Let the dish simmer for a couple of minutes to marry all the flavors.

Serving and Tips:

This Spicy Mango Chicken Pasta weighs approximately 800g when cooked and serves 4 people. Each serving is around 200g, with an estimated calorie count of 400 per portion. To add an extra kick to this dish, sprinkle some chopped cilantro on top before serving.

I recommend letting the pasta sit for a few minutes before serving to allow the flavors to meld together. This dish is perfect for a cozy dinner at home or a potluck gathering with friends. Give it a try and feel free to adjust the spiciness level to suit your taste buds. Happy cooking!
