The combination of spicy coconut shrimp and fresh, crunchy slaw in a warm tortilla is just unbeatable. These tacos are perfect for a casual weeknight dinner or a fun gathering with friends. Ingredients:

  • Large shrimp (400g), peeled and deveined
  • Coconut milk (200ml)
  • Sriracha sauce (30ml)
  • Fresh lime juice (2 tbsp)
  • Garlic powder (1 tsp)
  • Ground cumin (1 tsp)
  • Salt (1/2 tsp)
  • Black pepper (1/4 tsp)
  • Vegetable oil (2 tbsp)
  • Corn tortillas (8)

  • Grill pan

I start by marinating the shrimp in a mixture of coconut milk, sriracha sauce, lime juice, garlic powder, cumin, salt, and black pepper for about 30 minutes. This allows the flavors to really penetrate the shrimp and gives them a delicious, spicy kick.

Next, I heat some vegetable oil in a skillet over medium heat. Once the oil is hot, I add the marinated shrimp and cook them for 2-3 minutes on each side until they are pink and cooked through. The coconut milk adds a creamy richness to the shrimp, while the sriracha brings the heat.

While the shrimp are cooking, I heat up the corn tortillas in a grill pan until they are warm and slightly charred. This adds a lovely smoky flavor and helps to soften the tortillas for easy wrapping.

To assemble the tacos, I place a few shrimp in each tortilla and top them with a crunchy slaw made from shredded cabbage, carrots, and a tangy dressing of lime juice, honey, and a pinch of salt. The contrast of textures between the tender, spicy shrimp and the crisp, fresh slaw is simply irresistible.

The total weight of the cooked dish is approximately 1000g. This recipe makes 4 servings, with each serving weighing about 250g. Each serving is approximately 350 calories.

One clever tip for this recipe is to sprinkle some toasted coconut flakes over the tacos before serving. This adds a delightful crunch and an extra layer of coconut flavor that takes these tacos to the next level.
