I start by gathering all my ingredients: 300g of arborio rice, 1 small pumpkin (about 800g), 1 onion, 2 cloves of garlic, 1 red chili pepper, 1 teaspoon of cumin, 1 teaspoon of paprika, 1 liter of vegetable broth, 100ml of white wine, 50g of grated parmesan cheese, and salt and pepper to taste.

To prepare this dish, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large saucepan
  • wooden spoon

Start by peeling and dicing the pumpkin into small cubes. Finely chop the onion, garlic, and red chili pepper. In a large saucepan, heat some olive oil over medium heat. Add the onion, garlic, and chili pepper, and sauté until fragrant.

Next, add the arborio rice to the saucepan and toast it for a few minutes until it becomes translucent. Then, pour in the white wine and allow it to cook off before adding a ladle of vegetable broth. Stir continuously until the broth is absorbed.

Continue adding the broth one ladle at a time, stirring frequently, until the rice is creamy and al dente. This process should take about 18-20 minutes. In the meantime, sprinkle in the cumin, paprika, salt, and pepper for an extra burst of flavor.

Once the risotto reaches the desired consistency, fold in the diced pumpkin and cook for an additional 5 minutes until the pumpkin is tender. Finally, stir in the grated parmesan cheese until melted and well combined.

The total weight of the cooked Spicy Pumpkin Risotto is approximately 1500g. This recipe yields 4 servings, with each serving weighing around 375g. One serving of this delicious dish contains around 350 calories.

A clever tip for this recipe is to toast the arborio rice before adding the liquid ingredients. This extra step enhances the nutty flavor of the rice and adds a delightful depth to the dish.
