Today, I want to share a unique recipe for Spicy Pumpkin and Apple Soup that combines the sweetness of apples with the earthiness of pumpkin and a kick of spice. This delicious soup is perfect for cozy nights in or as a starter for a fall dinner party.

Ingredients:

  • 1 small pumpkin, peeled and diced (500g)
  • 2 apples, peeled and diced (250g)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red chili, sliced
  • 1 liter vegetable broth
  • 1 can coconut milk (400ml)
  • 2 tbsp curry powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Kitchen Tools:

To start, heat olive oil in a large pot over medium heat. Add the chopped onion, garlic, ginger, and sliced chili and sauté until fragrant. Then, add the diced pumpkin and apples to the pot and cook for a few minutes until they start to soften.

Next, pour in the vegetable broth and coconut milk, then add the curry powder, cumin, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the pumpkin and apples are tender.

Once the vegetables are soft, use an immersion blender to puree the soup until smooth and creamy. Adjust the seasoning with more salt and pepper if needed.

Serve the Spicy Pumpkin and Apple Soup hot, garnished with a swirl of coconut milk and a sprinkle of chili flakes for an extra kick.

This recipe makes approximately 4 servings, with each serving weighing around 400g. One serving of this soup contains roughly 250 calories.
