Hey there, foodies! Today, I’m excited to share with you one of my favorite dishes for a hot summer day — Spicy Mango Shrimp Tacos. The sweet and tangy mango paired with the fiery shrimp creates a flavor explosion that’s perfect for a casual lunch or dinner with friends. Let’s dive into the recipe!

Ingredients:

  • 500g shrimp, peeled and deveined
  • 2 ripe mangos, diced
  • 1 jalapeno, finely chopped
  • 1 lime, juiced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 8 small corn tortillas
  • Salt and pepper to taste

To start, heat olive oil in a skillet over medium heat. Add the shrimp, cumin, paprika, garlic powder, salt, and pepper. Cook for 2-3 minutes on each side until the shrimp is pink and cooked through. Remove from heat and set aside.

In a mixing bowl, combine diced mango, jalapeno, red onion, cilantro, lime juice, salt, and pepper. Toss to combine and set aside.

Warm the corn tortillas in the skillet for about 30 seconds on each side. Assemble the tacos by placing shrimp on a tortilla, topping with mango salsa, and garnishing with extra cilantro.

Tip:

For an extra kick of heat, add a dash of hot sauce or chopped habanero peppers to the mango salsa!
