Ingredients:

  • 1 ripe pineapple, peeled and diced
  • 2 jalapenos, seeded and chopped
  • 1 red onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Fresh cilantro, chopped
  • Lime wedges

To start, preheat your oven to 400°F (200°C). In a mixing bowl, combine the diced pineapple, chopped jalapenos, sliced red onion, and red bell pepper. Drizzle with olive oil and sprinkle with smoked paprika, cayenne pepper, cumin, salt, and pepper. Toss everything together until well coated.

Spread the mixture out on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes until the veggies are caramelized and the pineapple is golden brown.

While the pineapple mixture is roasting, warm the corn tortillas in a dry skillet over medium heat until they are heated through. Keep them warm in a kitchen towel until ready to serve.

Once the pineapple mixture is done roasting, remove it from the oven and let it cool slightly. Spoon the roasted mixture into the warm tortillas and top with fresh cilantro. Serve with lime wedges on the side for squeezing over the tacos.

This recipe makes 8 tacos, with each serving weighing approximately 150 grams. One serving of these roasted pineapple and jalapeno tacos is approximately 250 calories.
