Ingredients:

  • 1 medium head of cauliflower (about 600g)
  • 3 tbsp taco seasoning
  • 2 tbsp olive oil
  • 8 corn tortillas
  • 1 ripe avocado
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • 1 jalapeno, sliced

Start by preheating your oven to 400°F (200°C). Wash and dry the cauliflower, then chop it into small florets. In a mixing bowl, toss the cauliflower with taco seasoning and olive oil until well coated. Spread the cauliflower out in a single layer on a baking sheet and bake for 25-30 minutes, or until golden brown and crispy.

While the cauliflower is roasting, prepare your toppings. Mash the avocado with lime juice in a small bowl and season with salt and pepper to taste. Warm the corn tortillas in a dry skillet over medium heat until soft and pliable.

Once the cauliflower is done, assemble your tacos by filling each tortilla with a spoonful of mashed avocado, a generous helping of roasted cauliflower, fresh cilantro, and sliced jalapeno. Feel free to add any additional toppings of your choice, such as salsa or hot sauce.

Tip:

For an extra kick of flavor, try adding a dollop of vegan chipotle mayo or cashew cream to your tacos.
