Today’s Unique Recipe: Spicy Mango Chicken Tacos

I’m excited to share a new recipe with you today that combines the sweet and tangy flavor of mango with spicy chicken in a delicious taco dish. This dish is perfect for a casual dinner with friends or a fun family meal.

Ingredients:

  • boneless, skinless chicken thighs (500g)
  • mango, diced (2 large)
  • red bell pepper, thinly sliced (1)
  • red onion, thinly sliced (1)
  • jalapeno, seeded and diced (1)
  • garlic, minced (3 cloves)
  • cumin (1 tsp)
  • paprika (1 tsp)
  • chili powder (1 tsp)
  • lime, juiced (1)
  • cilantro, chopped (1/4 cup)
  • salt and pepper to taste
  • flour tortillas (8)

Kitchen Tools:

  • knife
  • cutting board
  • skillet
  • tongs
  • wooden spoon

To start, heat a skillet over medium heat and add the diced chicken thighs. Cook until browned and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the red bell pepper, red onion, jalapeno, and garlic. Cook until the vegetables are soft. Then, add the cumin, paprika, and chili powder. Stir to combine.

Return the cooked chicken to the skillet and add the diced mango, lime juice, and cilantro. Season with salt and pepper. Cook for another 2-3 minutes until everything is heated through.

Warm the flour tortillas in a dry skillet or microwave. Spoon the spicy mango chicken mixture onto each tortilla and serve hot.

The total weight of the cooked dish is approximately 1200g, with 8 servings. Each serving weighs around 150g. An estimated calorie count per serving is 300 calories.

One unique tip for this dish is to add a sprinkle of crumbled queso fresco on top of the tacos for an extra burst of flavor and creaminess.
