Ingredients:

  • 200g firm tofu, cubed
  • 1 ripe mango, diced
  • 1 red bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red chili pepper, sliced
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil

To start, heat the vegetable oil in a wok over medium heat. Add the minced garlic, grated ginger, and sliced chili pepper, and sauté for a minute until fragrant. Next, add the cubed tofu and cook until golden brown and crispy on all sides.

Once the tofu is cooked, add the sliced bell pepper and onion to the wok. Stir-fry until the vegetables are tender-crisp. Then, add the diced mango, soy sauce, rice vinegar, sesame oil, and brown sugar to the wok. Stir well to combine all the ingredients and allow the flavors to meld together.

Season the stir-fry with salt and pepper to taste, and continue cooking for a few more minutes until everything is heated through. Serve the spicy mango tofu stir-fry hot over steamed rice or noodles, and garnish with fresh cilantro or sliced green onions for an extra pop of flavor.
