Ingredients:

  • rice noodles (200g)
  • peanut butter (100g)
  • soy sauce (50ml)
  • sriracha (1 tbsp)
  • lime juice (1 tbsp)
  • honey (1 tbsp)
  • garlic (2 cloves, minced)
  • ginger (1-inch piece, grated)
  • red bell pepper (1, sliced)
  • carrots (2, julienned)
  • green onions (2, chopped)
  • sesame seeds (for garnish)

  • skillet
  • whisk
  • tongs

To start, cook the rice noodles according to the package instructions in a large pot of boiling water. In a skillet, combine the peanut butter, soy sauce, sriracha, lime juice, honey, minced garlic, and grated ginger over low heat. Stir until the sauce is smooth and well combined.

Next, add the sliced red bell pepper and julienned carrots to the skillet and cook until they are slightly tender. Toss in the cooked noodles and green onions, using tongs to mix everything together evenly.

Once everything is heated through, serve the Spicy Thai Peanut Noodles in bowls and garnish with sesame seeds for a nutty crunch. This dish is best enjoyed hot, with an extra squeeze of lime juice for a refreshing finish.
