Fiery Fusion: Spicy Thai Pineapple Salmon Recipe

Thai-Inspired Spicy Pineapple Salmon

Today, I’m excited to share with you a recipe that combines the sweet and tangy flavors of pineapple with the kick of Thai spices. This dish is perfect for a summer dinner party or a cozy night in with loved ones. Let’s get started!

Ingredients:

  • 4 salmon fillets (approx. 600g)
  • 1 fresh pineapple, peeled and diced (approx. 500g)
  • 1 can of coconut milk (400ml)
  • 2 tbsp of red curry paste
  • 1 lime, juiced
  • Handful of fresh basil leaves, chopped
  • 2 tbsp of fish sauce
  • 2 tbsp of brown sugar
  • 2 tbsp of vegetable oil
  • Salt and pepper to taste

Kitchen Tools:

  • wooden spoon
  • grill

Start by seasoning the salmon fillets with salt and pepper. In a skillet over medium heat, add vegetable oil and sear the salmon fillets until golden brown on both sides. Remove from the skillet and set aside.

In the same skillet, add the red curry paste and cook for a minute until fragrant. Pour in the coconut milk, fish sauce, brown sugar, diced pineapple, and lime juice. Stir well to combine and bring to a simmer.

Add the seared salmon fillets back into the skillet, spooning the pineapple coconut mixture over the top. Cover and let it simmer for 10-15 minutes until the salmon is cooked through and flakes easily with a fork.

Once the salmon is cooked, sprinkle fresh basil over the top. Serve the spicy pineapple salmon hot, alongside steamed rice or noodles.

This spicy pineapple salmon dish weighs approximately 1600g after cooking, serving 4 people with an average serving size of 400g. Each serving is approximately 400 calories.

One unique tip for this dish is to marinate the salmon in a mixture of lime juice and Thai spices for an hour before cooking to enhance the flavors.
