As the weather starts to cool down and the holiday spirit fills the air, I always find myself craving comforting yet adventurous dishes that bring a bit of excitement to the dinner table. That’s why today, I’m sharing my unique recipe for Wasabi Pesto Pasta with Seared Scallop. This fusion dish combines the bold flavors of wasabi with the freshness of pesto, topped with perfectly seared scallops for a dish that’s sure to impress.

Ingredients:

  • 200g pasta of your choice
  • 1 tbsp wasabi paste
  • 30g fresh basil leaves
  • 50g pine nuts
  • 2 cloves of garlic
  • 50g grated parmesan cheese
  • 6 large scallops
  • 2 tbsp olive oil
  • to taste

  • skillet
  • cheese grater

To start, cook the pasta according to the package instructions until al dente. In the meantime, make the pesto by blending basil leaves, pine nuts, garlic, parmesan cheese, wasabi paste, olive oil, salt, and black pepper in a food processor until smooth.

Next, heat a skillet over medium-high heat and sear the scallops for 1-2 minutes on each side until they are golden brown and cooked through. Season with salt and black pepper to taste.

Once the pasta is cooked, drain it and toss it with the wasabi pesto until well coated. Divide the pasta onto plates and top each serving with the seared scallops. Drizzle with a bit of extra olive oil and sprinkle with some grated parmesan cheese.
