A Spicy Twist on Classic Mac and Cheese

Hey there, foodies! Today, I’m excited to share with you my latest creation — a spicy twist on the classic mac and cheese dish. I was craving something comforting with a kick, and this recipe hits the spot perfectly.

I started by cooking 250g of elbow macaroni in a large pot of boiling water until al dente. While the pasta was cooking, I finely chopped 1 jalapeño pepper and 1 clove of garlic. In a separate saucepan, I melted 50g of butter and added the chopped jalapeño and garlic, cooking until fragrant. Then, I stirred in 30g of all-purpose flour to make a roux.

Next, I slowly whisked in 500ml of whole milk until the mixture thickened. To add some depth of flavor, I tossed in 100g of sharp cheddar cheese, 50g of Monterey Jack cheese, and a pinch of cayenne pepper. Once the cheeses were melted and the sauce was smooth, I seasoned it with salt and pepper to taste.

After draining the cooked pasta, I combined it with the spicy cheese sauce, ensuring that each noodle was perfectly coated. To finish off the dish, I topped it with panko breadcrumbs mixed with a sprinkle of smoked paprika for a crunchy, smoky finish.
