Today’s Recipe: Spicy Vegan Lentil Tacos

Hey there, foodies! I’m excited to share one of my favorite recipes with you today. These spicy vegan lentil tacos are perfect for a casual weeknight dinner or a fun weekend lunch. The combination of hearty lentils, zesty spices, and crunchy toppings makes for a completely satisfying and delicious meal. Let’s dive in!

Ingredients:

  • medium saucepan

For the lentils:
– 200g dried green lentils
– 500ml vegetable broth
– 1 teaspoon cumin
– 1 teaspoon chili powder
– 1/2 teaspoon garlic powder
– Salt and pepper to taste

For the taco filling:
– 1 tablespoon olive oil
– 1 small red onion, diced
– 2 cloves garlic, minced
– 1 bell pepper, diced
– 1 can diced tomatoes
– 1 tablespoon tomato paste
– 1 teaspoon smoked paprika
– 1/2 teaspoon cayenne pepper (adjust to taste)
– Salt and pepper to taste

For serving:
– Taco shells or tortillas
– Avocado slices
– Fresh cilantro
– Lime wedges
– Vegan sour cream or yogurt

Preparation:

Start by rinsing the dried lentils under cold water. In a medium saucepan, combine the lentils, vegetable broth, cumin, chili powder, garlic powder, salt, and pepper. Bring to a boil, then reduce heat and let simmer for about 20-25 minutes, or until the lentils are tender.

In a separate pan, heat the olive oil over medium heat. Add the diced onion and garlic, cooking until soft and translucent. Next, add the bell pepper, diced tomatoes, tomato paste, smoked paprika, cayenne pepper, salt, and pepper. Let the mixture simmer for another 10-15 minutes, allowing the flavors to meld together.

Once the lentils are cooked and the taco filling is ready, it’s time to assemble your tacos! Fill each taco shell or tortilla with a generous scoop of lentils and the spicy vegetable mixture. Top with avocado slices, fresh cilantro, a squeeze of lime juice, and a dollop of vegan sour cream.

Tip:

For an extra pop of flavor, try adding a squeeze of fresh lemon juice to the lentils before serving. The acidity will brighten up the dish and bring all the flavors together beautifully.
