Ingredients:

  • boneless chicken thighs (500g)
  • sweet potatoes (300g)
  • dried apricots (100g)
  • red onion (1 medium)
  • honey (50g)
  • balsamic vinegar (30ml)
  • cinnamon (1 tsp)
  • olive oil
  • salt and pepper

To begin, preheat your oven to 200°C. Cut the sweet potatoes and red onion into chunks and place them in a mixing bowl. Add the dried apricots, honey, balsamic vinegar, cinnamon, a drizzle of olive oil, and a pinch of salt and pepper. Toss everything together until the sweet potatoes are evenly coated.

Next, lay the chicken thighs on a baking sheet and season them with salt, pepper, and a touch of olive oil. Spread the sweet potato mixture around the chicken on the baking sheet. Place the sheet in the preheated oven and bake for 30-35 minutes, or until the chicken is cooked through and the sweet potatoes are golden and tender.
