  • rice noodles (200g)
  • coconut milk (400ml)
  • red curry paste (2 tbsp)
  • vegetable broth (500ml)
  • tofu, cubed (200g)
  • broccoli florets (150g)
  • carrot, thinly sliced (1)
  • bell pepper, sliced (1)
  • lime, juiced (1)
  • cilantro, chopped (for garnish)

Prepare your kitchen tools:

  • large pot
  • wooden spoon
  • knife
  • cutting board
  • ladle

In a large pot, bring the vegetable broth and coconut milk to a simmer. Stir in the red curry paste until well combined and fragrant. Add in the tofu, broccoli, carrot, and bell pepper. Let the soup simmer for about 10 minutes until the vegetables are tender.

Meanwhile, cook the rice noodles according to the package instructions. Once cooked, drain and set aside.
