Hey there, foodies! Today, I’m excited to share a delightful and flavorful recipe for Coconut Curry Tofu Noodles. This dish is perfect for a cozy night in or a gathering with friends. The creamy coconut curry sauce pairs perfectly with the crispy tofu and tender noodles, creating a harmonious blend of textures and flavors.

Ingredients:

  • 200g extra firm tofu, cubed
  • 150g rice noodles
  • 400ml coconut milk
  • 2 tbsp curry powder
  • 2 tbsp soy sauce
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • Juice of 1 lime
  • 2 green onions, sliced
  • Fresh cilantro, for garnish

To start, heat a large skillet over medium heat and add a splash of oil. Toss in the cubed tofu and cook until crispy and golden brown on all sides, about 10-12 minutes. Remove the tofu from the skillet and set aside.

In the same skillet, add the minced garlic and grated ginger. Sauté for a minute until fragrant, then pour in the coconut milk, curry powder, soy sauce, and lime juice. Stir to combine and let the sauce simmer for 5-7 minutes to allow the flavors to meld together.

While the sauce simmers, cook the rice noodles according to the package instructions in a separate saucepan. Once cooked, drain the noodles and add them to the coconut curry sauce. Toss to coat the noodles evenly in the sauce.

Finally, add the crispy tofu back to the skillet and gently mix everything together. Serve the Coconut Curry Tofu Noodles hot, garnished with sliced green onions and fresh cilantro.
