Ingredients

– 400g skinless, boneless chicken thighs
– 1 onion, thinly sliced
– 2 cloves of garlic, minced
– 1 red bell pepper, sliced
– 1 can (400ml) coconut milk
– 2 limes, juiced and zested
– 2 tbsp curry powder
– 1 tsp ground turmeric
– Salt and pepper, to taste
– 1 head of cauliflower, grated into rice
– 1 tsp cumin
– 1 tsp coriander
– 1/2 tsp cinnamon

Preparation

Start by seasoning the chicken thighs with curry powder, turmeric, salt, and pepper. In a large skillet over medium heat, sear the chicken until golden brown and cooked through. Remove from the skillet and set aside.

In the same skillet, sauté the onion, garlic, and red bell pepper until softened. Pour in the coconut milk, lime juice, and lime zest. Add the cooked chicken back into the skillet and simmer for another 5-10 minutes until the flavors meld together.

Meanwhile, in a separate skillet, sauté the grated cauliflower until tender but still slightly crunchy. Sprinkle in the cumin, coriander, cinnamon, salt, and pepper, stirring well to combine.
