  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tsp curry powder
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 200ml coconut milk
  • 200g diced tomatoes
  • Fresh coriander for garnish
  • Salt and pepper to taste

Now, let’s gather our kitchen tools:

Start by heating some oil in a skillet over medium heat. Add the diced onion, minced garlic, and grated ginger, stirring until the onion is soft and translucent. Next, add in the curry powder, cumin, coriander, and turmeric. Cook for another minute until fragrant.
